The Last Crossing is a homage to the classic Belgian Saisons that often graced the growing grounds of Wallonia. Brewed as a four grain example of the style with Barley, Oats, Wheat, and Spelt, The Last Crossing is light & opaque in color but heavy in protein for great body and foam, in a beer that is fermented so dry. Hopped heavily in the brewhouse with Spalt Select, Tettnang, and Saaz, these continental hops lay down a base of earthy hop character that is balanced by some floral and citrus notes. The second season harvest of Meyer Lemon found us with some excellent concentrate to add during mid fermentation. This addition of concentrate is fully fermented out, but leaves behind notes of lemon balm and sweet citrus. Finally, saving the best for last, a Saison yeast of French origin creates a beautiful bouquet of spicy, floral, and peppery esters to complete the package. From a brewing perspective, Saison is an exercise in simplicity. From a drinking perspective, it’s difficult to find a more expressive beer with so much nuance - a true classic.
