TSANTSA (the shrunken head) is a hoppy red ale brewed with various specialty malts for a deep red, almost brown color and hopped at levels similar to IPAs. Hot side, TSANTSA is hopped with Centennial, Mosaic, and Simcoe hops to lay down “old school” base aromatics and flavors of citrus, pine, and just a hint of some tropical fruit. Post fermentation, we got RED in the face with a big dry hop of more Simcoe, Mosaic, Centennial - but added in some Comet to liven things up a bit and drive home that old school hoppy red character. The sum of these parts is a perfect hoppy fall beer, with body and malt, but backed up with a nice hop punch. A beer so fun it’ll make your head explode, or shrink…
