D.O.W. is a hyper modern and aromatic West Coast IPA, brewed with our buddy Kyle of HORUS Aged Ales. Lean in the malt profile, D.O.W. has just a touch of malt character and sweetness, from a blend of two distinctly different Pilsner malts, to back up a HEAVY hop load of Citra, Galaxy, Nelson, Simcoe & Nectaron. First, in the boil and whirlpool, we layered in Simcoe, Citra, and Galaxy for a base profile of tropical fruit and southern hemisphere gooseberry. Post fermentation we DESTROYED & DUMPED bags and bags of Nelson, Nelson Amplifire, Simcoe, Citra (T90 & Cryo), Galaxy, & Nectaron to amplify the tropical fruit and add to the complexity with notes of rainbow nerds, orange blossom, pineapple guava, and heavy resin sour diesel.
